The EASIEST & tastiest meal when you’re in need of something comforting. From the crispy panko breadcrumbs and the saltiness from the bacon, to the the zesty & aromatic flavours from the lemon and the parsley. It’s super speedy so is ideal for a delicious mid week dinner!

Ingredients

  • 1 pack of gnocchi
  • 8 rashers of The Jolly Hog Smoked Streaky Bacon
  • 2 cloves of garlic
  • Juice of half a lemon
  • Handful of grated parmesan
  • Bunch of parsley, finely chopped
  • Handful of panko breadcrumbs
  • Salt & Pepper

Method

  1. Start by chopping the streaky bacon into small pieces. Heat a frying pan over a medium heat and fry the bacon until golden & crispy
  2. Add your gnocchi to a pan of boiling water and cook for 2-3 minutes. You'll know your gnocchi is ready when it floats to the surface! When cooked, keep a cup of the pasta water and drain the rest
  3. Place the panko breadcrumbs onto a baking tray with a drizzle of olive oil. Cook under the grill for a couple of minutes until golden
  4. Add your crushed garlic to the bacon and cook for another minute
  5. Add the bacon & garlic to the gnocchi pan. Add a splash of pasta water, lemon juice, parsley & parmesan & stir on a low heat to combine for a minute or two. Add more pasta water if you need more sauce
  6. Garnish with extra parmesan, the panko breadcrumbs & season with salt & pepper
