Bacon Loaded Pancakes

Our great taste award winning Double Smoked Back Bacon is the perfect pancake topper… the ultimate combo in our eyes. Top with blueberries and maple syrup and you have a top notch brunch sorted.

Ingredients

  • 275g plain flour
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 1 tbsp caster sugar
  • 2 medium free range eggs
  • 275ml whole milk
  • 50g unsalted butter, melted, plus a few extra knobs
  • 1 pack of The Jolly Hog Smoked Back Bacon
  • Blueberries, to serve
  • Maple Syrup, to serve

Method

  1. Preheat the grill to medium-high.
  2. Tip the flour, baking powder, bicarbonate of soda and sugar into a mixing bowl and whisk together to combine. Crack the eggs into a jug with the milk and melted butter. Mix to combine.
  3. Make a well in the bowl of flour and slowly pour in the milk mixture, whisking constantly as you pour, until smooth with no lumps.
  4. Arrange the bacon on a baking tray and cook under the grill until golden and crispy.
  5. Place a large non-stick frying pan and melt a little more butter over a medium-low heat. Add 3 large tablespoonfuls to the pan and cook for 1-2 mins, until bubbles start to appear. Flip and cook for another min. Repeat with the remaining batter.
  6. Pile the pancakes onto plates and serve with a knob of butter on top, crispy bacon, blueberries and maple syrup.
