Bacon Loaded Pancakes

Ingredients
- 275g plain flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- 1 tbsp caster sugar
- 2 medium free range eggs
- 275ml whole milk
- 50g unsalted butter, melted, plus a few extra knobs
- 1 pack of The Jolly Hog Smoked Back Bacon
- Blueberries, to serve
- Maple Syrup, to serve
Method
- Preheat the grill to medium-high.
- Tip the flour, baking powder, bicarbonate of soda and sugar into a mixing bowl and whisk together to combine. Crack the eggs into a jug with the milk and melted butter. Mix to combine.
- Make a well in the bowl of flour and slowly pour in the milk mixture, whisking constantly as you pour, until smooth with no lumps.
- Arrange the bacon on a baking tray and cook under the grill until golden and crispy.
- Place a large non-stick frying pan and melt a little more butter over a medium-low heat. Add 3 large tablespoonfuls to the pan and cook for 1-2 mins, until bubbles start to appear. Flip and cook for another min. Repeat with the remaining batter.
- Pile the pancakes onto plates and serve with a knob of butter on top, crispy bacon, blueberries and maple syrup.
