The best brunch is a slow summer morning, top tier ingredients, a bottle of fizz and a table full of people you want to linger with.

This killer brunch uses our Proper Posh Extra Thick Cut Black Treacle Bacon, served on a slice of homemade brioche loaf. Popped in the toaster. Topped with some garlic mushrooms and a truffled golden yolk egg.

Sprinkle with your chives, and then sparkle with some fizz on the side.

Ingredients

  • x2 packs of The Jolly Hog Black Treacle Bacon
  • x4 brioche bread slices
  • 100g Salted butter
  • A bottle of Gusbourne Exclusive Release
  • x4 St. Ewe Luxuriously Large Rich Yolk Eggs
  • Truffle Guys Truffle Dust
  • 300g Exotic mushrooms
  • x3 cloves of garlic
  • A handful of chives

Method

  1. Heat the pan on a medium heat and add the Bacon and cook to the colour of your liking.
  2. Melt 75g of salted butter into a frying pan on medium heat, add the chopped mushrooms and cook for 5 minutes.
  3. When softened, add the finely diced garlic into the the mushrooms and cook for a further 5 mins.
  4. Slice and toast your freshly baked brioche bread.
  5. In a separate pan, fry your eggs, being sure to maintain a runny yolk.
  6. To assemble, place the brioche slices on the plate, spoon over the garlic mushrooms, top with the eggs. Lay the bacon over the top.
  7. Finish with a dash of chives and a sprinkle Truffle Dust to your liking.
  8. Serve alongside chilled Gusbourne Sparkling Wine.
