We’ve come up with some delicious side salads to accompany our new hot smoked BBQ range. This panzanella salad is a perfect fresh accompaniment to our spicy Hot Link sausage – you’ll be sure to impress your friends and family at your next BBQ gathering!
Hot Link Sausage & Panzanella salad
Recipe Details
Ingredients
- 800g mixed tomatoes
- Half a ciabatta or sourdough loaf (even better if it's slightly stale!)
- 50ml red wine vinegar
- 100ml olive oil
- 1 shallot
- A handful of black olives
- 1 tin of anchovies
- 1 bunch of basil
Method
- Cut or tear your bread into small chunks, drizzle with olive oil and then bake in the oven for 10 minutes until lightly toasted
- For the dressing, finely chop your shallot, then whisk together with the olive oil and red wine vinegar
- Chop the tomatoes into various sized chunks & finely chop the anchovies, basil and black olives. Toss all the ingredients together in a large bowl along with the croutons and dressing. Season to taste with salt and pepper.
- Cook your hot link sausage according to pack instructions and serve alongside the salad. Enjoy!
