Colman’s Sausage Toad in the Hole

Ingredients
- 1 pack of The Jolly Hog Colman's Sausages
- Sunflower oil
- 150g Plain Flour
- 200ml of Milk
- 2 Eggs
- Fresh Thyme
- Salt & Pepper to season
Method
- Pre-heat the oven to 220c
- Cook your Colman’s mustard Sausages for 15 minutes or until lightly browned
- Whilst the sausages are cooking, to make the batter. Mix together your plain flour, 1/2 a tsp of salt
- Crack your eggs into the mix and begin whisking, we’d recommend using an electric whisk for this. Constant whisking is key for a smooth batter
- Whilst mixing, slowly add the milk into the mix, for a lighter crispier batter mix, add a small dash of water
- Add your sunflower oil into an oven proof dish and pop in the oven for 5 minutes to pre-heat before adding your batter
- Remove the sausages and batter dish from the oven, set the sausages aside for now
- Pour the batter mix into your pre-heated dish and swiftly place your Colman’s mustard sausages into the batter mix
- Put the dish back into the oven for 25-30 minutes or until fully risen, crispy, golden and delicious (leave the oven door shut throughout for optimal results)
- Remove and top with some fresh thyme - serve with seasonal greens and onion gravy, enjoy!
