Leek Porker Casserole

Ingredients
- 1 pack of The Jolly Hog Leek Porkers
- 1 leek
- 2 cloves of garlic
- 2 carrots
- 1 jar of Bold Bean Butter Beans
- 2 tins of tomatoes
- 200ml beef stock
- 1 tsp smoked paprika
- 3 bay leaves
- A handful of chopped parsley
- Bread, to serve
Method
- Finely dice your carrot and garlic. Slice your leek into thin roundels.
- Add a slug of olive oil to an oven proof casserole pan. Once hot, brown the Leek sausages in the pan for a couple of minutes so they have some golden colour. Remove from the pan and set aside
- Add the carrot, garlic & leek to the casserole pan and sauté for 10 minutes until soft and cooked through. Add the paprika and bay leaves, stir to combine with the veg
- Add the tinned tomatoes and the beans (add the bean stalk too!) and bring to a simmer. Once simmering, add 200ml of stock to the pan and season generously with salt and pepper
- Add the sausages back to the casserole pan, add a lid and pop in the oven for 45 minutes. Remove the lid and continue to cook in the oven for an additional 10 minutes to thicken the casserole
- Serve up the casserole into portions and sprinkle with chopped parsley. We recommend tucking into this with a slice of fresh sourdough - perfect for mopping up the sauce!
