Marmite Sausage Pasta

This Marmite Sausage pasta is an ideal thing to whip up quickly mid week. The Marmite Sausages give an extra depth of flavour whilst the lemony courgettes add a freshness that cuts through the dish. Give it a go – you’re bound to love it.

Ingredients

  • x2 The Jolly Hog Marmite Sausages
  • 75g pasta (shape of your choice!)
  • 1 tablespoon butter
  • 1 teaspoon Marmite
  • 1/4 courgette, in ribbons
  • 1 tablespoon lemon juice
  • 40g parmesan

Method

  1. Bring a pan of salted water to the boil and add your pasta. Cook according to pack instructions
  2. Heat a frying pan on the hob. Once hot, take The Jolly Hog Marmite Sausages and squeeze the sausage meat out of their skins into the pan. Fry the crumbled sausage meat until golden and crispy. Remove a spoonful of this sausage meat from the pan and set aside for later
  3. Add your butter and marmite to the pan with the sausages and allow to melt. Add a ladle of pasta water to the pan and mix well
  4. In a separate hot frying pan, add the courgette ribbons along with a drizzle of olive oil. Cook for a couple of minutes until soft, then season with black pepper and a tbsp of lemon juice
  5. Once the pasta is cooked, transfer the drained pasta to the sausage meat pan and mix well to combine. To create a creamy sauce, add small spoonfuls of pasta water on a low heat. Add your parmesan to the pasta and stir together
  6. Plate your pasta and top with the courgette ribbons and the remaining sausage meat. Add an extra grating of parmesan, season generously with pepper and enjoy!
