This posh sausage and beans recipe is one of those great sausage recipes you can enjoy any time of day. It’s super easy and a great way to make delicious, slow cooked baked beans yourself. The homemade pistachio pesto recipe adds a lovely punchiness to this tomato beans recipe, and works perfectly with our Apple Porkers. Try it for yourself now!

Ingredients

For the Beans
  • 1 pack of The Jolly Hog Apple Porkers
  • 1 Jar of Butter Beans (we love Bold Bean Co)
  • 1 pack of chestnut mushrooms
  • 1 clove of garlic
  • 3 shallots
  • A handful of basil
  • 1 tin of chopped tomatoes
  • A handful of fresh spinach
  • 20g parmesan
For the Pistachio Pesto
  • 100g pistachio kernels
  • 30g parmesan
  • A handful of basil
  • 1 garlic clove
  • 75ml olive oil

Method

  1. Start by slicing the chestnut mushrooms and finely dicing the shallots and garlic
  2. Sauté the shallots, mushrooms & garlic in a tablespoon of olive oil for a couple of minutes in a casserole dish
  3. Add the beans, chopped tomatoes and spinach along with the liquid from the beans, season generously and stir. Cook on a low heat for 1 hour 15 minutes
  4. Meanwhile, make the pistachio pesto. Take all the ingredients and blend until finely chopped
  5. 20 minutes before the beans are done, take the pack of Apple Porkers and oven cook according to pack instructions
  6. When the beans have finished cooking, add the chopped basil and stir through. Plate up the beans with the sausages, adding a generous grating of parmesan to the beans. We’d recommend serving the pistachio pesto with some toasted sourdough, or even simply spooned on top of the beans for an extra flavour kick!
