Our proper porkers are perfect for adding flavour to your cooking. These Middle Eastern inspired sausage koftas combine the flavours of garlic, sumac and chilli – they’re great served up with flatbreads, pickles and your choice of dips on the side. Go give them a try, you’ll be sure to impress your friends and family with these!

Ingredients

For the Koftas
  • 1 pack of The Jolly Hog Proper Porkers
  • Parsley
  • 1 tsp sumac
  • 1 tsp chilli flakes
  • 1/2 tsp cumin
  • Wooden skewers
  • 2 cloves garlic
Optional sides
  • Flatbreads
  • Pickled slaw salad
  • Labneh
  • Hummus

Method

  1. Pre heat your BBQ before preparing your koftas. If you don't have a BBQ, you could also cook these on a griddle on the hob
  2. De-skin your sausages by running a sharp knife down the edge of the sausage and place the sausage meat into a bowl
  3. Finely chop the parsley & garlic and add to the sausage meat along with all the spices. Mix well with your hands to combine
  4. Take your wooden skewers and form a kofta shape around each of the skewers. Ensure these are packed tightly around each skewer to ensure they don't fall off!
  5. Cook the skewers on the BBQ for 15-20 mins, turning occasionally to make sure they're browned evenly. Ensure the meat is piping hot and well cooked
  6. Serve up on a platter with your favourite sides and enjoy!
