This is one of our favourite Summer sausage pasta recipes. This romesco pasta is a great quick and easy dinner that uses our delicious Proper Porker sausages whilst also sneaking in some vegetables… it’s a win – win especially if you’re feeding little people!
Sausage Romesco Pasta

Ingredients
- 2 red peppers
- 3 sun-dried tomatoes
- A handful of almonds
- 1 tbsp red wine vinegar
- 2 minced garlic cloves
- 2 tbsp olive oil
- Chopped parsley
- 1 pack of The Jolly Hog Proper Porker sausages
- 150g rigatoni
Method
- Begin by roughly chopping the red peppers and sun dried tomatoes
- Add the peppers, tomatoes, almonds, olive oil, red wine vinegar and garlic to a food processor and whizz until smooth
- Add a small amount of oil to a pan on a medium heat. Once hot, squeeze the sausage meat out of the skins and fry for 5 minutes to create crispy sausage crumbs
- Whilst your sausage meat is cooking, cook the pasta in a pan of salted boiling water until al dente
- When the pasta is cooked, add this to the pan of sausage meat and stir through the romesco sauce. Add a ladle of pasta water to make a silky sauce and top with chopped parsley & parmesan. Serve and tuck in!
