This sausage traybake recipe is a great summer recipe. This traybake uses our sweet Caramelised Porker sausages which pair perfectly with the roasted vegetables coated in a sticky balsamic vinegar glaze. It’s an easy, healthy midweek dinner recipe – no fuss but all the flavour.

Ingredients
- 2 red onions, cut into wedges
- 2 red peppers, deseeded and torn into rough chunks
- 1 bulb garlic, cut in half horizontally
- 400g cherry tomatoes on the vine, mixed colour if available
- A 400g pack of The Jolly Hog Caramelised Porker British Sausages (you could swap out for any of our other sausage flavours if you prefer!)
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 courgettes, sliced into chunky slices
- 6 sprigs thyme
Method
- To make this Summer sausage traybake recipe, start by preheating the oven to 200°C/fan 180°C.
- Place the red onions, peppers, garlic, tomatoes and sausages into a large baking tray or dish. Drizzle over the vinegar and olive oil, season with salt & pepper and toss to coat all the veggies and sausages.
- Roast for 30 mins. Remove from the oven, give everything a toss and add in the courgette slices and thyme sprigs. Return to the oven for a final 10-15 mins until golden brown.
