If you’re looking for the perfect afternoon snack that feels a bit special but delivers big on flavour, we’ve got just the one for you. This is our take on the classic Scotch Egg, made using our Colman’s Mustard Outdoor Bred & RSPCA Assured sausages for a punchy, tangy twist. Wrapped around a perfectly soft-boiled egg and coated in a golden, crispy crumb, it’s everything you want in one bite — rich, satisfying, and seriously tasty.

  • 3 slices of stale sourdough bread - lightly toasted

  1. Bring a saucepan of water to the boil
  2. Add eggs and boil for 6 minutes
  3. add the eggs to the iced water
  4. Divide the sausage meat and squeeze into equal portions
  5. Make breadcrumbs – whizz slices of bread along with rosemary, salt and pepper
  6. Beat the eggs
  7. Decant flour into a bowl along with breadcrumbs and egg into separate bowls respectively
  8. Delicately remove the shell from the eggs
  9. Flour eggs
  10. Flatten sausage meat, place egg into the centre of the sausage meat and wrap around
  11. Flour the egg and sausage, followed by egg, then breadcrumbs
  12. Fry eggs in deep fat fryer for 7 minutes
  13. Remove and allow to cool
