Wrapped around a perfectly soft-boiled egg and coated in a golden, crispy crumb, it’s everything you want in one bite — rich, satisfying, and seriously tasty.
The Jolly Hog Colman’s Sausage Scotch Egg

Ingredients
- Then Jolly Hog Colman's Mustard Sausages
- Eggs (we like St Ewe Rich Yolk)
- 3 slices of stale sourdough bread - lightly toasted
- Flour
- Rosemary
- Salt & Pepper
- Frying Oil
Method
- Bring a saucepan of water to the boil
- Add eggs and boil for 6 minutes
- add the eggs to the iced water
- Divide the sausage meat and squeeze into equal portions
- Make breadcrumbs – whizz slices of bread along with rosemary, salt and pepper
- Beat the eggs
- Decant flour into a bowl along with breadcrumbs and egg into separate bowls respectively
- Delicately remove the shell from the eggs
- Flour eggs
- Flatten sausage meat, place egg into the centre of the sausage meat and wrap around
- Flour the egg and sausage, followed by egg, then breadcrumbs
- Fry eggs in deep fat fryer for 7 minutes
- Remove and allow to cool
